Breakfast Fried Rice

Breakfast Fried Rice is my new favorite breakfast recipe! I am making this super easy by using a back of frozen cauliflower fried rice, but you can certainly use fresh. I am also keeping this recipe vegetarian, but it would be great with some bacon added as well! The possibilities are endless and this is a great recipe for using up any left over veggies you have in your fridge. The best part is that runny egg yolk that creates a rich sauce over the fried rice. I am getting hungry all over again!
Breakfast Fried Rice

Ingredients

1 bag of frozen fried rice style cauliflower rice

1 cup day old cooked brown rice

1 clove of garlic

1 teaspoon sesame oil
-
2 tablespoon low sodium soy sauce or tamari if GF

2 large eggs

Option topping: sriracha and chopped scallions.

Instructions
1. Heat a large pan over medium heat and add the frozen cauliflower rice. Let it cook for 3 minutes until its mostly defrosted.
2. Add the brown rice, grate in the garlic, and add the sesame oil. Give everything a stir to combine and then spread the rice into one even layer on the pan.
3. Let the rice cook for 3-5 minutes without touching it.
4. In a separate non-stick pan, crack in your eggs and cook them sunny side up for about 3 minutes.
5. Once you see the bottom of your rice is browning, add the soy sauce and stir everything to combine.
6. Continue to stir fry the rice for another 3 minutes until it gets a little bit crispier.
7. Plate the rice into two equal portions and top each one with an egg and fresh scallions. If you like it spicy you can also add sriracha to your taste.
