Edamame Salad

This is probably the easiest salad recipe you will ever make. It requires very little chopping and only a few ingredients. Its also a great salad for meal prepping. The longer it sits in your fridge the better it tastes, because the edamame soak up all of the flavor from the dressing. This salad is great on its own or with some salmon.
Edamame Salad

Ingredients

12 oz bag of frozen shelled edamame

1/3 cup diced red bell pepper

1/3 cup shredded carrots

1/2 cup cilantro, or to taste

Dressing:

​3 tablespoons low sodium soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon sesame seeds

1 tsp sriracha or to taste

Instructions

Defrost the edamame in the microwave and set in the fridge to cool down.

Finely chop the cilantro.

To prepare the dressing, mix the soy sauce, rice vinegar, sesame oil, sesame seeds​​, and sriracha in a small bowl or container.

Once the edamame is cool, toss all of the ingredients together. You can serve it immediately, but its best if it sits in the fridge for an hour or even overnight.
