Lightened Up Egg Salad
Egg salad is one of those classic recipes thats been around forever and everyone has their own version of it. Well, thats not stopping me from throwing my hat in the ring and sharing my own! Of course you know my version of this recipe has its healthy twist, so I use lite mayo. I also use only use half of the yolks in my egg salad, because honestly thats just how I like it texture wise. I like to keep it super simple, but you can definitely dress this up with additional ingredients if thats your thing! So basically what I'm saying is let this be the foot print for you to create the egg salad of your dreams. This is mine and I hope you like it!
Lightened Up Egg Salad
Serves: 3

Ingredients

6 hard boiled eggs, peeled

1 1/2 tablespoons lite mayo

1 teaspoon dijon mustard

1 scallion sliced

salt and pepper to taste

Instructions
1. Remove the yolks from three of the hard boiled eggs and save them for another recipe.
2. Chop the eggs and add to a bowl with the mayo and dijon.
3. Mix everything together and mash with a fork to get the eggs to the consistency you like.
4. Add the scallions and season with salt and pepper to your liking.
5. Serve on toast, with crackers, or on top lettuce !
