Loaded Sausage & Peppers

I first saw this way of preparing sausages on TikTok (by @lowcardstateofmind) and I knew I had to try it with my own spin! This dish is very quick and easy to prepare, but I made it even easier by using fully cooked chicken sausages from the refrigerated section of the grocery store. I just recently discovered this brand Amylu, and i am a big fan already. The ingredients in their products that I've tried are great and the taste is amazing.  Watch my video above for a quick tutorial and give this recipe a try!

Loaded Sausage and Peppers

Serves: 2

Ingredients

  • 1 tablespoon olive oil

  • 2 medium bell peppers in any color you like

  • 1/2 a white onion

  • 3 cloves of minced garlic

  • 1/4 tsp salt

  • 1/4 tsp Italian blend seasoning

  • 4 Amylu Italian Chicken Sausages

  • Yellow mustard to taste (optional)

  • 1/2 cup fat free shredded mozzarella

Instructions

  1. Slice the bell peppers and onion thinly.

  2. Heat a large non-stick skillet with the olive oil over medium heat, and once hot add the peppers and onions. 

  3. Cook for 5-7 minutes until soft, and in the last 2 minutes add the minced garlic.

  4. Remove the veggies from the pan and set them aside.

  5. Butterfly the sausages and place them cut side down into the pan. Press them lightly to make sure they get good contact with the pan so they can get crispy!

  6. Cook for 3 minutes then flip the sausages over.

  7. Drizzle the yellow mustard over the sausages, top with the sausage and peppers, and sprinkle everything with the shredded mozzarella. 

  8. Cover the pan and cook for 2-3 minutes until the bottom of the sausages get brown and the cheese is melted.
