Pickle Brined Pretzel Chicken

Serves: 4

Ingredients

  • 1 lb chicken breast

  • Left over pickle juice (enough to cover the chicken -- preferably dill pickle juice) 

  • 1 egg white + 1 large egg

  • 3/4 cup panko bread crumbs

  • 3/4 cup crushed salted pretzels​


Instructions

  1. Cut the chicken breast into 1-2" cubes making 25 pcs total

  2. Place the chicken into a container and cover with the pickle juice,

  3. Allow the chicken to marinade in the fridge over night.

  4. The next day, drain the chicken.

  5. Mix the panko with the crushed pretzels in a shallow bowl.

  6. Whisk the egg white and the whole egg togehter.

  7. Working with one hand, dip the chicken into the egg. Use your other hand to coat the chicken in the bread crumb mixture.

  8. Repeat this with the rest of the chicken.

  9. Working in batches, lay the chicken onto your air fryer basket and air fry at 350 degrees for 15-17 minutes flipping half way through.​
