Greek Quinoa Crunch Salad

Ingredients

  • 2 1/2 cups cooked quinoa

  • 1/4 cup pickled onions*

  • 1/2 cup cherry tomatoes sliced in half

  • 1/2 cup chickpeas

  • 1 cup sliced red and orange bell peppers

  • 4 oz fat free feta cheese

  • 1 cup diced cucumbers

  • 1/2 cup crushed multigrain pita chips

  • Lemon and olive oil for serving

Instructions

  1. Toss all of the ingredients together in a bowl except for the pita chips.

  2. When ready to serve, add the crushed pita chips and drizzle with lemon juice and olive oil.
