Ingredients

2 1/2 cups cooked quinoa

1/4 cup pickled onions*

1/2 cup cherry tomatoes sliced in half

1/2 cup chickpeas

1 cup sliced red and orange bell peppers

4 oz fat free feta cheese

1 cup diced cucumbers
-
1/2 cup crushed multigrain pita chips

Lemon and olive oil for serving

Instructions

Toss all of the ingredients together in a bowl except for the pita chips.

When ready to serve, add the crushed pita chips and drizzle with lemon juice and olive oil.
