Raspberry Chia Seed Parfait

Parfaits are one of those most common grab and go items for breakfast, but often times they're full of added sugars. That's why I knew I had to make my own in my semi homemade series! These are super easy to make and they're great for meal prepping. I prefer to use a plain yogurt and add my own flavoring and sweetener, because then I can avoid some of the crummy ingredients brands put in their flavored yogurt. By making the jam ourselves we will also save ourselves from the added sugars, making this a much healthier parfait than the one you can buy at your local coffee shop.

Assemble your parfaits in jars with lids so you can take them on the go and enjoy!

Raspberry Chia Seed Parfait

Serves: 3

Ingredients

  •  6 oz carton of raspberries​

  • Juice from 1/2 a lemon

  • 1 tablespoon water

  • 1 tablespoon chia seeds

  • 2 1/4 cups plain nonfat greek yogurt or a  plain non-dairy yogurt

  • 1 1/2 tablespoons Really Raw Honey

  • 1 teaspoon vanilla extract

  • 6 tablespoons New England Naturals Unsweetened Berry Coconut Granola

 

Instructions

1. In a small pot add the raspberries, water and lemon juice.

2. Heat the pot over a medium low flame and break up the raspberries with a fork or masher.

3. Let the raspberries come to a simmer and bring the heat down to low. 

4. After about 5-6 minutes, when the raspberries are about 75% done, stir in the chia seed.

5. Cook for another two minutes until the jam has thickened to the consistency you like.

5. Take 3 jars and layer each one with 3/4 of a cup of yogurt, 2 tablespoons of jam, and 2 tablespoons of granola.
