Riced Cauliflower Mac and Cheese

This mac and cheese totally blew me away! Using frozen riced cauliflower makes this recipe very quick and easy to make, and everything can be done in one pan. You have to give this recipe a try its cheesy, delicious and you won't even realize its healthy for you! 

Riced Cauliflower Mac and Cheese

Serves: 1-2

Ingredients

  • 10 oz bag frozen riced cauliflower

  • 1 tsp garlic powder

  • 1/2 tsp paprika

  • 1 tsp salt

  • 1 tbsp 1/3 less fat cream cheese

  • 1 tbsp unsweetened almond and coconut creamer (I like Nut Pods best)

  • 1/4 cup shredded Mexican blend cheese

 

Instructions

  1. Heat a large pan over medium heat and spray with avocado oil.

  2. Add the frozen cauliflower rice and cook for 7 minutes, or until its completely thawed. Make sure the pan is hot so that as your cauliflower thaws it doesn't get soggy.

  3. Sprinkle in the garlic powder, paprika, and salt. Mix well to combine.

  4. Push the cauliflower to the outer edges of your pan to create a well. 

  5. Add the cream cheese and creamer to your well and give it a stir to melt the cream cheese a little bit before mixing it in with the cauliflower.

  6. Once the cauliflower is coated with the cream cheese mixture, sprinkle in the shredded cheese and stir until everything is melted and combined.
