Rotisserie Chicken Green Enchiladas

I love a good rotisserie chicken. It tastes great as is, but it can also be repurposed so many ways to make quick meals. A fun way to use some rotisserie chicken or any left over chicken you may have it so make enchiladas! You can have a delicious healthy meal and its so easy to make because its semi-homemade. But no one has to know ;)
Rotisserie Chicken Green Enchiladas

Ingredients

1/2 tsp olive oil

1/2 small yellow onion diced

10 oz shredded rotisserie chicken (about 2 cups)

1/2 tsp salt

1/2 tsp garlic powder
-
1/4 tsp cumin
-
8oz package Frontera Green Enchilada Sauce

1/4 cup nonfat greek yogurt
-
1/2 cup shredded part skim mozzarella

8 low carb whole wheat tortillas or tortillas of your choice (I like La Tortilla Factory)

Instructions
1. In a pan, heat the olive oil. Once hot, sauté the onions with a pinch of salt until they are soft.
2. In a bowl, combine the chicken, yogurt, 1/4 cup of the enchilada sauce, all of the spices, and 1/4 cup of the cheese.
3. Warm the tortillas in the microwave under a damp towel for 30 seconds.
4. Pour 1/4 cup of the reserved enchilada sauce on the bottom of a 9x13" casserole dish.
5. Take one tortilla and scoop 1/4 cup of the chicken mixture onto it. Spread the chicken into a log shape towards the edge of the tortilla leaving a little bit of space to fold it over.
6. Roll the tortilla up and place it seam side down in the casserole dish so it doesn't unravel.
7. Repeat steps 5&6 with the rest of the tortillas and chicken.
8. Once all tortillas are rolled up, pour the rest of the enchilada sauce on top and spread it out evenly. Sprinkle the remaining cheese on top.
9. Cover with foil and bake for 25-30 minutes.
