Summer Strawberry Salad

Summer Strawberry Salad

Serves: 2

Ingredients

1/4 cup unsalted almonds*
2 cups baby spinach
2 cups arugula
3/4 cup sliced strawberries
2 oz goat cheese
2 tablespoons mint​
 

Instructions

  1. Put the almonds in a plastic bag and crush them with the flat side of a meat mallet or a rolling pin.

  2. Heat a pan on a low flame and add the crushed almonds to the pan. Toast the nuts for about 5 minutes, tossing frequently.

  3. To assemble the salad, toss the greens and strawberries together. 

  4. Tear up the mint with your hands and add it to the salad.

  5. Crumble the goat cheese on top and sprinkle on the almonds. Serve with your favorite balsamic vinaigrette.
