Watermelon Feta Salad With Shrimp

This watermelon salad is light, refreshing and perfect for summer.
Watermelon Feta Salad with Shrimp

Ingredients

8 oz raw peeled and deveined shrimp

1 tsp garlic and herb seasoning
-
1/4 tsp salt
-
6 cups cubed watermelon
-
1/4 cup sliced red onion
-
8 basil leaves
-
4 mint leaves
-
1/4 cup crumbled feta cheese
-
Dressing:
-
1 lime
-
1 tablespoon extra virgin olive oil
-
1 tsp chili lime seasoning
-
pinch of salt​

Instructions
​1. Season the shrimp with the garlic and herb seasoning and salt.
2. Heat a non-stick skillet over medium low. Cook the shrimp for 2-3 minutes on each side and set aside once done.
3. Stack the basil leaves on top of each other and roll them into a cigar. Run your knife through the basil creating thin slices. It should measure 2 tablespoons roughly.
4. Repeat the same process with the mint. It should measure 1 tablespoon.
5. In a small bowl, whisk together all of the dressing ingredients and season to your taste.
6. Layer all of the salad ingredients on a platter, top with the dressing and serve!
