Pretzel Chicken Salad

Ingredients

  • ​1/2 of my pickle brined pretzel chicken recipe

  • 6 cups chopped romaine lettuce

  • 1/2 a large cucumber

  • ​1 cup cherry tomatoes

  • 1/2 avocado

  • Dressing

    • 1 tablespoon dijon mustard

    • 1 tablespoon honey

    • 1/4 cup extra virgin olive oil

    • 1 teaspoon garlic and herb seasoning

    • 2 tablespoon apple cider vinegar

    • pinch of salt

Instructions

  1. Peel the cucumber and chop into small cubes.

  2. ​Slice the cherry tomatoes in half.

  3. In a small bowl, whisk together all of the dressing ingredients.

  4. Toss all of the salad ingredients in a large bowl and drizzle on the dressing.
